Creamy Chicken and Spinach Risotto


Creamy Chicken and Spinach Risotto

Recipe: ( Makes 2...in 60 minutes : / )
2 tablespoons olive oil, divided
1/2 onion, chopped
1/8 cup balsamic vinegar
3/4 cups uncooked Arborio rice
1/4 cup dry white wine warmed in microwave for 30 seconds+ 1/8 cup for chicken
1/2 cup hot water
1/2 cup hot milk ( not boiling)
2 cups hot chicken broth ( about one can's worth)
1/2 tablespoons butter
1 chicken breast, thawed and sliced into pieces
1/8 tsp garlic salt
1/8 tsp dried thyme
(1/4 cup chopped frozen spinach OPTIONAL)
Pan 1: The Onions
  1. Heat oil in a pan and saute onions until soft, then add balsamic vinegar and mix for about 30 seconds, turn off heat.
Pan 2: Chicken
  1. Heat oil in a pan, and add chicken , heat until cooked thoroughly, then add wine to deglaze the pan. Turn off heat, and wait for risotto
Pan 3: The Rice
  1. Heat 1 tbsp oil in medium heat until hot, then add rice and stir for 2 minutes, then add wine and stir until almost all absorbed, add garlic salt and thyme .
  2. Add chicken broth 1 cup at a time, stir until absorbed before added the next part of the liquid
  3. When out of chicken broth, add the hot water, stir until absorbed, add frozen spinach if desired ...
  4. When the rice is almost done, add final liquid ( Milk) then stir in the onions, chicken, and butter. Rice should be cooked ( around 30 minutes)
If you time this all correctly,it should take around 60 minutes. It's definitely a multitasking challenge! : ) Enjoy <3>
The top picture (1st one) was spot on, I want all my food pictures to look like that, you can even see steam!!!.... but haven't been able to do so with my other foods... I have one window in my apt, and we don't face much light..maybe that's why.. : ( 112 votes on allrecipes.com , and didn't even win, that was my most votes ever... sighhh what does it take.. that seriously is too much effort! ....Must practice on the presentation more.. that means... new dishes.... ok how about when I move home haha
