Bacon Wrapped Everything.......


Here comes the bacon!.. It's been so long since I've made bacon wrapped anything, but now that I'm at home, bacon found its way into my fridge, courtesy of walmart : ) They have a great selection of bacon... go figure. So, in the past, I've done bacon wrapped scallops, filet mignon, yea, basically bacon wrapped anything and everything, and now it's time for CHICKEN!!!! ...

So, on my trip to Seattle, I wandered into a spice market, it was next to the fish throwing place, and well, no one was buying fishes, so there was no use in just standing around waiting for fish to be thrown. This spice shop was SO amazing, I really wish we had one in the bay area, I'm sure they do, but haven't seen one yet. They sold spices and teas buy the oz.. which made it perfect for trying things. I got antsy though. I wanted to see more of the market, not just spend all my time in a tiny spice shop haha, so I bought some Smoked Paprika ( as well as some matcha, and orange cinnamon tea) .. but yea, smoked paprika. It's supposed to be really really good. I'm sure it is, but haven't found a recipe to showcase it. Plus, I like to use things that I have little of, very cautiously, until I find a vendor in the Bay that sells this. I think Safeway might, but Raley's didn't. There isn't really a recipe for this thing. It's just, rub a bit of salt, pepper, paprika onto a boneless skinless chicken breast, wrap with 2 slices of bacon, and bake for 30 minutes at 350 degrees, or until juices run clear. It really can't get anymore simple. However... cutting the chicken with the bacon on is kind of a drag. The bacon doesn't really stick to the chicken, so the bacon pieces come off, but the insides of the chicken is kept moist and flavorful.
