is Valentine's day? is it really? It's almost Valentine's day! I love to bake during this holiday, everything is so pretty, pink, cute, and girly! I wish my Valentine was close this year, especially after everything I've learned in the kitchen since last Valentine's day. (I made my first fondant cakes last V-day) I guess I will send some non-perishable desserts down soon... but how to be creative for that? Hm. So I rushed myself to bake some cupcakes for a friend I haven't seen in awhile (less than 1.5 hours from start to finish.) Life has gotten so busy that I haven't even hung out with friends for like a month! AHHH. Anyway. I hope to get my life back, because really what's life without friends? I made these early in the morning and realized something was wrong already. These were my no fail cupcakes, but somehow they did! They were dry, and did not make 12 cupcakes. I can't figure it out... but maybe I just wasn't into it. I've been MIA from the baking department for the last few weeks. I guess they were ok. I'm just frustrated with the dry texture. : ( I'm really convinced it's my electric oven. I miss my gas ovens. Baking was so much more even and consistent with that...
Chocolate cupcakes with melted Andes spread on top, with fluffy cream cheese frosting.. Packed up... all snugged and ready to go!
