Almond Truffles

My 100th Post!!!! Hooray!!!

Along with those milk chocolate almonds my family always gets at See's Candies every holiday, we typically also eat a few of the almond truffles. It's basically a truffle covered in chopped almonds. I tried to make this today... because I had some heavy whipping cream leftover.

Almond Covered Chocolate Truffles
(Makes 15-20 depending on your size)

1/2 cup milk chocolate chips (good quality)
1/2 cup semi sweet chocolate chips (good quality)
1/6 cup heavy whipping cream
3 tbsp butter , cut into 6 cubes

1/2-1 Cup chopped almonds that have been roasted a bit on a pan over medium heat (7-10 minutes,) chopped when cooled ( I used a food processor) I also sifted out the almond grounds so only big chunks were left.

1. Heat heavy whipping cream in a small sauce pan until it starts to simmer.
2. Add butter to the pan and stir until melted and simmering. ( med-lo heat)
3. Reduce heat to low. Add the chocolate chips, and stir until smooth. Pour into small bowl and chill in the fridge for a few hours, until firm. ( You can freeze it as well.)

After your mixture is chilled....
1. Spoon out mixture to a desired size. Work in little batches at a time ( around 5 truffles ) put back the un-spooned mixture back into the fridge while forming the balls
2. *This will get messy* Use your hands to form balls. Form all the balls first, then roll and press into chopped almonds. Return to fridge or freezer so it is cold again.
3. Repeat until finished.

*These need to be refrigerated... They're kinda too soft at room temp. I think I will add less butter or cream next time. I like a more firm truffle. I also like a truffle I can leave outside the fridge... hm.. maybe no cream next time? We'll see. This is a nice treat, but I don't see myself doing this a lot. There's too much down time.

Both of these pictures were taken with the 50mm lens... I gave up after taking a few pictures of these truffles and switched back to the regular one. I mean, it's an ok lens for this, especially for choosing which truffle I wanted to focus on.. other than that.. still pretty difficult to shoot with (for small food.)
A nice box of homemade chocolates would make a wonderful gift.. don't you think? :-) These weren't too difficult, just a tad time consuming and messy.

    @ anonymous - I put them in the fridge for 4 hours. I only did half of the batch then because it was still kind of soft.(These things melt so quickly when handled!) The other half I chilled overnight.
