Chicken Tortilla Soup and Guacamole


I've been munching on a bag of tortilla chips all week... and I've finally finished! (I used the bits of chips on the bottom to garnish this dish) Fear not.. I have 2  more bags... just because I love chips! I'm pretty proud of myself for having a semi decent diet this week. I lived on a diet of beef, stews, breads, cupcakes, cookies, and avocados. I think I've gained some much needed weight especially after my bout with food poisoning the week before. I've had chicken tortilla soup once in my life.. and that was at school. The soup was delicious but.. it was missing tortillas. I didn't care if it came with soft tortillas or if there just a sprinkling of chips on top... there was nothing. So.. disappointing. That's probably why I don't eat at school much... only on emergencies. The food is alright, but I know I can do better. I looked up recipes for this soup, but couldn't find one in which I had all the ingredients. What better than to improvise?... It tasted like a good hearty chicken soup with a bit of a kick from the peppers. Another satisfying meal ending one busy week.... but then again... next week I predict to be worse. :( Oh well. I'll take it day by day.

Chicken Tortilla Soup
1 tbsp oil
1 clove garlic minced
1/4 onion chopped
1/2 jalapeño, diced (I wish I left the seeds in... it wasn't spicy at all!)
1 zucchini, chopped
1 roma tomato diced
1 boneless chicken breast
1 can chicken broth
1 tsp chicken bouillon powder
1/2- 1 cup water
2 tsp cumin
1/2 tsp oregano
1/2 tsp cayenne pepper
2 tbsp ketchip
1/3 cup black beans (canned)
1/3 cup frozen corn
1/4 cup salsa verde
salt and pepper
diced avocados for garnish
tortilla chips

1. Heat a large pot with oil. Add garlic and onions, sauté until the onions are soft, then add everything else, bring to a simmer and cover with a lid.
2. After 15 minutes of simmering .... take out the chicken and shred it with 2 forks, place back into the pot, cover and let simmer for 10 more minutes. Season to taste.
3. Add avocados for garnish and sprinkle with tortilla chips.

Guacamole
I just chopped up some avocados, onions, tomatoes, jalapeños, salt, pepper to taste and then squeezed half a lime on top of it. Mixed and mashed well, and just ate straight from the bowl.
