Lemon Poppy Seed Loaf with Lemon Glaze

This recipe was one of my first posts... I looked back and smile to see how much progress I've made in photography.... I still love this recipe because it's super simple. This weekend has started off really slowly. It's a 3 day weekend... usually I'm out and about probably on some random vacation somewhere... not this year.  I'm just relaxing and trying not to think of the load of work I didn't do for the past few weeks... paper.. presentation... assignments... tests... and how can I forget.. I need to schedule some patients or the next 2 weeks will be excruciatingly slow. All I seem to be doing these days is cook.

Changes: 2 mini loaves instead of mini muffins. I baked it for almost 30 minutes at 375 degrees. 

Glaze: Squeeze half of a lemon into a bowl. Remove all seeds. Add around 1.5 - 2 cups of powdered sugar, stir until you get a pourable consistency. Poke holes on the top of the loaves with a fork. Pour over the tops of the loaves that are on a baking rack. Be sure to have something to catch the drippings!
