Back to cooking land. Start to finish, this took 1 hour. Not bad. I used a crust recipe that didn't need to be chilled. The crust recipe didn't even have butter! I just mixed it up and formed it into a tart pan. The filling was simple, I cooked a few slices of bacon, then drained them on brown paper bags ( omg.. the fat....) and then sautéed some chopped fresh spinach in the same pan... added some shallots, and canned diced tomatoes, and waited for the crust to bake for 10 minutes. Many quiche recipes have fancy cheeses... I only had mozzarella on hand. It worked. I think I should have added a bit more salt. Overall, it was an easy dish, flaky crust, rich filling... more like a breakfast food than anything... hopefully it will last a few days for me. I already ate 1/3 of it for lunch.... now for the clean up... :( I hope this will be my last post for a few days... I just need to get through until Thursday, then I can bake and cook to my heart's desire for one whole glorious week :)
Well I realized, since there's now more daylight during the "day" ... I may now be able to photograph my dinners... it's been hard taking pics of things I make at night because I have no idea how to take decent pics with the lighting that I have in my apt. I might invest in a little photo box soon... until then.. this blog will be devoted to lunches.. day old dinners.. and weekend baking :)
Crust Recipe http://allrecipes.com/recipe/easy-pie-crust/ ( don't add sugar!!! ) I mixed it in a bowl first, not in the tart pan... then I formed it in the pan.
Spinach Bacon Quiche
Makes a 9 inch quiche
1 9 inch pie crust, pre-baked
2-3 cups chopped fresh spinach, quickly sautéed until starts to wilt
1 shallot finely chopped
3 slices of bacon, fried, drained, and crumbled
1/4 can diced tomatoes, drained
1 1/4 cup shredded mozzarella cheese
3 eggs
3/4 cup milk
1/4 cup heavy cream
salt and pepper to taste
1. Make the crust ( it will bake at 400 degrees.) Reduce temp to 350 degrees while filling up the pan.
2. Place the spinach, shallots, bacon, and tomatoes in the bottom of the tart pan , sprinkle on the cheese.
3. In a large bowl, whisk up the eggs, milk, cream, salt and pepper. Carefully pour over the spinach mixture. Bake for 30 minutes. Broil on low for 5 minutes on low or until the top is nice and golden (keep an eye on it!)
