Apple Oat Bran Muffins

In my quest to have a healthier life, and have healthier mornings, I decided to make oat bran muffins. I've had these a few times in my school's cafe, and the texture is definitely growing on me. I'm trying to incorporate more whole grains in my diet, with less sugar. I've been devouring fiber one bars daily ... and well. it's a little sweet for me.  I loosely followed the recipe on the Bob's Red Mill's ground flaxseed package, but added a lot more things. I added fats... around 1.5 tbsp oil, 1 tbsp sour cream (I don't know if that made any difference,) and 2 tsp half and half. That's not that much fat. The original recipe did not have any added oil, or butter, just the fats from the grains, eggs, and milk. I liked it. I didn't have a carrot, so I just shredded an entire apple. It worked well. It was a great "healthy" muffin.

Whole grain muffins are always a challenge to take a picture of, it was getting frustrating. The picture was quite plain, and my camera had no idea where to focus on because of the color. I'm going to continue to look at more tips on taking pictures of muffins... but yea. I made 8 muffins and ate all of them already.

These could be a little dangerous just because of the high fiber content (whole wheat flour, oat bran, and flaxseed)... I know, TMI right? I just wanted to give a heads up :)
