Crispy Oven Fries

Well I guess the secrets out, it's possible to make super crispy fries at home.. in your oven! I love fries.. if you were to ask my what my favorite foods are, it'd definitely be burgers, fries, bread, and pizza. Yep, I'm that simple.... but I do like to branch out and explore every other cuisine out there ever so often. Back to fries. Such a basic staple in my diet.. actually anything potato-y is. These fries were crispy, and could have been a lot crispier... if my fire alarm didn't go off too many times... I should not have followed the recipe so closely, I think tossing the potato wedges in oil in another bowl would have been smarter.. rather than tossing it on the silpat. I think the oil started to deep fry the gunk stuck on my sil pat causing it to smoke... arg.. oh well, next time, I"ll use a cleaner pan.. and maybe just parchment paper. So, what's the secret? high temp? pre cooking the potatoes? cornstarch? .. I think it's the later, I used to make fries without any cornstarch...and they were alright.. but I think... with cornstarch.. they were restaurant style. I actually used this recipe to make roasted potatoes for dinner with friends last night. It was great. I just wish I had a larger casserole dish so there was more crispy pieces. I'm trying to test all the highest gawked and favorites recipes on food gawker. com ... this was #1 ... I think it's worth the hype!
