Chicken Satay and Peanut Sauce

I've only had this once in my life, but liked it a lot, plus I figured I had all the ingredients in my pantry, so why not?

I don't know the exact recipe, but I just went off of one from AllRecipes.com ( my go-to recipe site) ... I added fish sauce, and more salt, and eyeballed the amounts, I hate measuring.. only when I bake! I also used a panini grill.. since i don't have a grill haha, worked great, but I think I may have grilled it for a little too long because I wanted those grill "marks" ...

- Chicken! ... marinated for probably only 40 minutes .. I was hungry!
- All I need , peanut sauce in sauce pan, marinated chicken on skewers, hot and ready panini grill, and my rice cooker! The sauce only took 5 minutes to make, and the chicken took around 8-9 minutes to grill, rice.. well.. rice is rice haha .. these meals don't take long ... I hate slaving away in my kitchen
- I put them on an angle because I wanted criss-cross grill marks... : / didn't work out

- Yum!! Although the peanut sauce looks like poo. HAHA My version of Thai Chicken Satay
  • 1/3 cup coconut milk
  • 1/2 tsp garlic salt
  • 1/2 tsp fish sauce
  • 2/3 teaspoon curry powder
  • 1 1/2 teaspoons brown sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/2 pound skinless, boneless chicken breast halves - cut into 1 inch strips
The Sauce:
  • 1/3 cup coconut milk
  • 1/2 tablespoon curry powder
  • 1/3 cup crunchy peanut butter
  • 1/3 cup water
  • 1/8 cup brown sugar
  • 1.5 tablespoons lime or lemon juice
  • 1 teaspoon soy sauce
  • Salt to taste
  • 6 (half) wooden skewers, or as needed... all depends on how many you want to skew
1. Mix all the ingrdients together minus the chicken, taste and adjust, then add the chicken and marinate for 1 hour .. or 2.. who knows..
2. For the Sauce: mix all ingredients in a small saucepan, and simmer on LOW until smooth and combined, serve warm
3. Preheat grill, on med/high , grill 4 minutes on each side, or until done, serve with peanut sauce and rice
