Che Dau Xanh - Mung Bean Dessert

This is a Vietnamese dessert that's pretty simple, just dried beans, water, sugar, and honey ( tapioca shreds are optional)... Although it is served hot at the end of the meals, it is a great drink/ dessert when it is chilled + shaved ice.

Che Dau Xanh

Ingredients : ( I usually eyeball things, and taste it to see if there's enough sugar)
2 quarts water
1/3-1/2 cup dried green mung beans
1/4 cup Honey
1/3 cup Sugar

1. Soak beans in 1 quart of water for at least 2 hours
2. In a large pot, add the remaining water and water+ beans mixture and bring to a boil, reduce to a simmer and cover for 45 minutes, stirring occasionally.
3. Add sugar and honey to taste , stir, beans should have opened up and look mushy, if not add a little bit of water and boil until beans are done.

Happy Summer! Remember to eat enough fiber! : )

  1. That is a GREAT picture. I love the glass and the way you angled the shot. Well done. I know you are still playing with you camera and the focus. That would be my only suggestion is reviewing the focal point on this one as well. But I love that martini glass; very cool.
