Lemon Poppy Seed Mini Muffins
(Makes 12 miniature muffins)
The goodies:
Dry Ingredients:
1 cup all purpose flour
1/2 cup white sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp (a pinch) of salt
1 tbs poppy seeds
Wet Ingredients:
1 egg
1/4 cup oil
1/3 cup sour cream
1 tbs milk
1/2 tsp lemon extract
1/4 tsp vanilla extract
1 cup all purpose flour
1/2 cup white sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp (a pinch) of salt
1 tbs poppy seeds
Wet Ingredients:
1 egg
1/4 cup oil
1/3 cup sour cream
1 tbs milk
1/2 tsp lemon extract
1/4 tsp vanilla extract
Instructions:
- Preheat oven at 400 degrees
- Mix all the dry ingredients together in a small bowl
- Mix all the wet ingredients in a larger bowl
- Mix the dry ingredients into wet, and stir until moistened
- Spray a 12 mini muffin pan with non-stick spray with flour, fill up each to the top, and place into oven
- If the pan was filled completely, it will take 12 minutes exactly. Always perform the toothpick test to be certain !
- I'm sure these could be a little more brown, but I have a gas oven, and browning means the bottoms are burnt
