Lemon Poppyseed Mini Muffins

I had such a craving for cakes these past few days. In attempts ( a successful one, albeit ) to procrastinate, I decided to go to Ralphs and buy some lemon extract because my last poppy seed loaf lacked that lemon flavor. Also, it was about time to toss out the 4+ years expired baking powder, and buy a fresh one...

Lemon Poppy Seed Mini Muffins
(Makes 12 miniature muffins)

The goodies:

Recipe:
Dry Ingredients:
1 cup all purpose flour

1/2 cup white sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp (a pinch) of salt
1 tbs poppy seeds

Wet Ingredients:

1 egg

1/4 cup oil
1/3 cup sour cream
1 tbs milk
1/2 tsp lemon extract
1/4 tsp vanilla extract

Instructions:
  1. Preheat oven at 400 degrees
  2. Mix all the dry ingredients together in a small bowl
  3. Mix all the wet ingredients in a larger bowl
  4. Mix the dry ingredients into wet, and stir until moistened
  5. Spray a 12 mini muffin pan with non-stick spray with flour, fill up each to the top, and place into oven
  6. If the pan was filled completely, it will take 12 minutes exactly. Always perform the toothpick test to be certain !
- I'm sure these could be a little more brown, but I have a gas oven, and browning means the bottoms are burnt

- Voila! Cute delicious little muffins!Back to studying....sigh...
