Baked Panko Breaded Chicken



Baked Panko Breaded Chicken

  • 1/2 pound skinless boneless chicken breasts sliced into nugget size pieces or strips ( or.. thighs will do, they are better with thighs but oh so fatty)
  • 1/4 Cup Mustard ( Spicy Brown or Honey Dijon )
  • 1/4 Cup Mayonnaise (YUMMY!)
  • 1/2 - 3/4 Tsp Lawry's Seasoning Salt
  • 2 tbsp Honey
  • 1/2 Panko Bread Crumbs

1. Mix the mustard,maynonnaise, salt and honey in a medium size bowl. ( Taste mixture to see if it needs more seasoning )
2. ( Optional.. if you have the time... ) Add 1/2 tsp apple cider vinegar to the mixture and toss with some thinly sliced onions and the chicken ( typically using the thighs.) Marinate for at least 2 hours, this chicken will absorb the flavor and be really juicy and tender. This is my bf's favorite chicken, I have not made it with panko yet, but I'm sure he'd like it as well...
3. Turn on the oven to 350 degrees.
4. Mix chicken with the mixture making sure it's evenly coated.
5. Place panko in a shallow dish. Toss with chicken.
6. Arrange in a single layer on a baking sheet sprayed with a little bit of PAM. Bake 15 minutes and turn over, and then for another 10. ( It depends on how thick you cut your chicken, so this is typically enough time for the size I showed up there.) I typically don't turn my pieces because I don't want to just stand around in the kitchen.
7. I like to serve this with honey BBQ sauce
