Did you have a good Thanksgiving?


I finally sliced into my leaf pie... it was soo goood...I topped it with freshly whipped cream with a hint of cinnamon.... : ) I'm reeaaally liking this whole made from scratch thing... having control of the ingredients is awesome!

So.. our family tradition is that we don't eat Thanksgiving dinner, but rather, Thanksgiving lunch. I don't know how that started, but at least it gives us the entire rest of the day to digest, sleep, watch the Cake Boss marathon.. hahaha ... and well.. eat leftovers before they head to the fridge and freezer. It also lets us sit and relax, and contemplate the sales we might hit up during black friday (BF) but I think this BF will be the most snooze-worthy of them all. The best deals are mostly online anyways. So here it is... culinary excellence out of my kitchen, and from various stores around the area... haha


Lunch is served... on the menu? ... Baked chicken from costco : ), honey baked ham.. from that store, steamed prawns, chow mein, sweet potato casserole, egg rolls, ribs, and my sis's very own baked mashed potatoes.... For dessert: apple pie, pumpkin bread, and fruits .. Beverage of choice? Apple cider, red/white wine, dessert wine, and... for me.. water : ) oh, I hate you GERD.. esp. on holidays....you make me the biggest party pooper ever : (

SkinnyMinhy's Sweet Potato Casserole
Sweet potato with a crunchy oat streusel top with slightly browned marshmallows

The Potatoes:
4 sweet potatoes , steamed, peeled, and mashed
1/4 cup heavy cream
1 tbsp brown sugar
1/4 tsp cinnamon
pinch of salt and pepper

Streusel topping:
1/4 cup oats grounded in a coffee grinder
2 tbsp flour
1 tbsp brown sugar
1/4 tsp cinnamon
1 tbsp cold butter

Marshmallows to top

1. Preheat oven at 375 degrees . Mix everything in the potatoes section in a large bowl, and transfer into a pan or casserole dish
2. Mix everything in streusel section until it resembles coarse crumbs, sprinkle over the top of the sweet potato mixture
3. Bake for 30 minutes, then turn on the broiler to LO, and brown the streusel until brown, but not burnt (just a few minutes.) Sprinkle on the marshmallows and broil until slightly brown. ( It browns very quickly!)

...and there you have it.. the best of both worlds.. candied yams/ sweet potato casserole all in one dish.. : ) I based this recipe off of something I had a Boston Market one day. I had a craving for take out when I was studying for the DATs and went to Boston Market to study... haha studying at a restaurant was fun.. especially at like 9 pm.. in a quiet corner.. I was so nerdy... hahaha but anyway, they had this sweet potato dish that was SOO good! I had to look up a recipe and found a knock off.. it wasn't really the same.. really really fatty, so I trimmed off a lot of the butter and had a lot more topping...and yes... that's all for now....
