In my house.. we call it.. Muscle Cake


Cream Puffs with Green Tea Filling
If there's anything that I was known for back in my early days of baking, it was .. bread.. and cream puffs. I found this recipe out of a... novel (a Nora Roberts one to be exact !) HAHA .. a real unlikely source for a recipe... but it has lasted for many many years. I haven't really tweaked it.. and have memorized it to a T. This recipe isn't for the weak. It requires a lot of muscle, stirring in the eggs one at a time. I sometimes have to alternate with my mom to get this to the right consistency. I used to be so much stronger...but I did manage to do this by myself today... what a workout!


Here is the super simple recipe made of everything you probably have in your pantry/fridge at any given time! :)

Cream Puffs ( Shell)

(Makes 20 with the small cookie scoop/4 rows of 5 on a cookie sheet)

1 stick unsalted butter
1 cup water
1 cup flour
4 eggs

1. Preheat oven at 350. Bring the butter and water to a boil.
2. Reduce heat to low, and add flour, stir until you get a ball, remove from heat
3. Cool for 5 minutes or until warm to the touch... ( or the eggs will cook when you put them in)
4. Stir in one egg at a time, until it is incorporated, the 4th egg will be really really hard to stir in, but keep at it! It will form a nice sturdy and sticky dough.
5. Scoop by using a teaspoon with another spoon pushing the batter out to form mounds, or whatever shape you want. I used a small cookie scoop because that was easy, and I wanted more uniform puffs. Space at least 2 inches apart.
6. Bake for 35 minutes, or until tops are golden brown. It depends on your shape. Don't open the oven door to peek, your puffs will deflate. In the last few minutes of baking, take the tray out and poke 2 holes in them to release the steam. A common problem with puffs is that they fall flat after baking.. this should take care of it when you poke the 2 holes.


As For the Green Tea Cream...
I eyeballed all of it. : ( I whipped up some heavy whipping cream to a nice sturdy peak. In a separate bowl, I heated around 1.5 tbsp water in the microwave until it boiled. I added a bit of Matcha powder ( my love! : D) and whisked it until the lumps were gone and it was nice and frothy. I then added some milk and vanilla pudding mix, just my desired amount for the filling, whipped that up, added it to the whipped cream, blended it some more, and then spooned them into my shells. I tried piping them, but used the wrong tip, so it didn't look too nice.. so I ate it! haha...


On another note... I finally found it!!! DUTCH PROCESSED COCOA POWDER!! It's actually RED! ...funny because it even states that it's "rare" on the front of the tin.... AND well....it's made by the BEST chocolate comp. ever- GUITTARD!!! Ok I just got really really excited for no reason... I really don't like Ghirardelli .. it's not good... maybe popular because it's local, but it's not the best chocolate I've had. I prefer Guittard as my chocolate chips. When they're on sale, they're around 25-50 cents more than Nestle... which... isn't bad! : ) They used to be the same price.. when Longs was still around... but CVS increased their prices : ( I can't wait to make more red velvets ! I found this at Sur La Table.. and it was 20% off... thanks to that wonderful time of year again.. aka.. F&F Discounts! :D I'm addicted to Slickdeals.. it's only been a year since I really was on their site.... it's crazy how many deals I've snatched up :D
