The Not So Gingerbread Men Cookies

...Stuck them on red velvet cupcakes with whipped cream cheese frosting. Many people thought they were actual gingerbread cookies, haha I guess the shape was deceiving. I just didn't think gingerbread would go well with red velvet. I made 24 little men, but many did not survive the trip to SF. Most of their eyes and buttons fell off, so I opted for sprinkles on the other dozen, plus I didn't want them to get soggy the next day if no one ate them. I actually finished making these cupcakes at the party haha. I was so rushed! I brought all of my baking equipment to the house and made the whipped frosting there. Thankfully it turned out nicely with all the eyeballing I did with the ingredients. : D
Chocolate Roll-Out/Cut-out Sugar Cookies
(Makes 60-70 little gingerbread men)

1-1/4 cups + 2 tbsp flour

1/4 cups + 2 tbsp cocoa powder

1/4 teaspoon salt

1/2 tsp baking powder

1/2 cup butter, softened (unsalted)

2/3 cups white sugar

1 egg

1 tsp vanilla extract

1. Mix dry ingredients in a bowl.

2. Cream butter and sugar in separate bowl, add in vanilla and egg, blend until combined. Mix dry ingredients into wet.

3. Transfer to saran wrap, and wrap tightly. Chill overnight or for a few hours. Roll between 2 pieces of wax papers and cut out. (If you have a hard time lifting your shapes, freeze the dough right after you stamp out the cookies, when it's chilled, it's easier to peel off, and you will have less broken limbs.) Preheat oven at 350. These cookies took around 7 minutes.

For the icing, I used some powdered sugar mixed with a little bit of milk and corn syrup. It dried hard, but did fall off the cookies. I was rushed, and it probably didn't have time to completely set. Oh well : )

  2. Thanks! :D I think almost every holiday can have a cupcake with a cute cut-out cookie on top...I just don't like plain ol' sugar cookies by itself! : )
