Corned Beef Sandwiches

It's St. Patrick's Day.. so I made corned beef (and cabbage...!) I'm a huge fan of beef in sandwiches. My sandwich of choice is usually a roast beef... or burgers. I've had corned beef sandwiches before, only when I know it's like fresh and not out of a can. I think the most recent time was at a food stand at The Grove in LA, which was really good, but really really big. I looked up recipes for corned beef and found one especially for sandwiches on AllRecipes.com. This was cooked in the slow cooker for 8 hours. The meat simmered in a beer, water, bay leaf, garlic, and seasoning mixture. It was wonderful. 8 hours later... I had a huge chunk of meat that was incredibly tender. YAY. So, I toasted up some white bread, slathered it with a good amount of spicy brown mustard, sprinkled the meat with a bit of cheese, and then broiled it. Delicious! I had it the next day where it had a chance to mingle in the fridge. It was so much easier to slice and tasted even better than the day before.

* Something that was not Irish was the beer I used... Guinness was probably the beer of choice.. but I only had Heineken at home... worked well, the beer flavor was subtle, but you can taste it, especially when it was fresh out of the slow cooker.

So here it is... a documentation of my adventure... haha I rarely use the slow cooker these days... and waiting 8 hours for a meal??? I don't know about that one....

Corned beef sliced cold. It was a lot easier to slice thinly when cold... look at the solidified fat! :-)

I couldn't resist.. I free-handed a 4 leaf clover out of mustard ... I should have tinted it green hm?
I'll say that's one good looking clover, I did it all in one squeeze! I remember in elementary school I used to sit on the grass and try to find a 4 leaf clover... I never found one.. I though only 3 leaf clovers existed.. and that the 4 leaf clovers are a myth just like the pot of gold... and leprechauns...but I guess they do exist.. just are really rare... :-/ This lunch was scrumptious : )
