Lemon Pepper Shrimp Fettuccine

I love pasta. I wanted a quick meal, and was similar to one that I would get at... let's say.. Olive Garden : )! I added a recipe to my box on allrecipes.com a few weeks ago, that was this one, with a few minor tweaks. This is my new favorite pasta recipe! It's so simple, and utilizes all the ingredients I have on hand at all times! (no cream in this one : ) )

Lemon Pepper Shrimp Fettuccine

Serves One Hungry person... : D
  • 3 oz dried fettuccine
  • 1-1/2 teaspoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth
  • 3 tablespoons white wine
  • 1 tbsp lemon juice
  • 1/4 tsp lemon extract
  • Lemon pepper seasoning to taste ( I have a grinder from Trader Joe's.)
  • 1/2 pound fresh or frozen (thawed) shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 tsp dried parsely
  • 1 teaspoons dried basil
  • 1/8 cup grated parmasean cheese
1. Cook your pasta to al dente.
2. In a large pan, heat your oil over medium heat, and add garlic. Saute for 1 minute.
3. Add chicken broth, wine, lemon juice, extract, salt, pepper, seasonings to the pan. Bring to a boil, and reduce heat and let simmer for 8 minutes.
4. Add in the 2 tbsp butter, and dried herbs. Toss in shrimp and cook for 3 minutes. Toss in cooked pasta and coat with sauce.
5. Add in grated cheese, and sprinkle some on top when plating.

or... if you prefer... Lemon Pepper Clams Cappellini...same thing, but I used the juices from the clams instead of chicken broth. These clams were from Trader Joe's, they had this garlic butter sauce on them, which went very well with my pasta. I used Cappellini because it cooks in 3 minutes. I was really hungry that day, and didn't want to wait 10 minutes for my pasta.
