Earl Grey Creme Brulee


It rhymes! So, i failed at making macarons.. the biggest disaster in over half a year... what happened? One bad egg... the eggwhites couldn't be whipped up... sigh. I had 3 egg yolks left over from making those macs, I wanted to make some creme brulee.. never thought it'd be this easy.

I don't know if I'm missing any steps.. I'm sure I am.. made this a few weeks ago.. and finally decided to write down the recipe... search creme brulee on allrecipes.com, i used a water bath for a more even baking, and also reduced the cream with some milk .. it was rich and custard like ..

4 servings
3 egg yolks
1/2 cup heavy whipping cream
3/4 cup whole milk
4 tsp of sugar
1 earl grey tea bag
extra sugar for top

Bring cream and milk to a simmer ( drop in an earl grey tea bag if you want), add sugar, then let cool for a few minutes (remove tea bag.) Whisk in eggs ( whisk quickly!! ) Preheat oven at 350, place 4 ramekins into a 8X8 inch pan, fill ramekins with mixture, then add boiling water to the pan to make a water bath, fill up 2/3 of the way up the ramekin's height, place into oven, back for 35-40 minutes until the center is jiggling, but not oozing out liquid. Chill for a few hours.

Blot off excess condensation formed from chilling, turn on broiler ( HI) , sprinkle a mixture of brown and white sugar on top ( around 1 tsp per ramekin ) ... brown tops.. be careful not to burn it! .. takes around 5 minutes... with my oven.. wish I had a blow torch : /

  1. Hey. I totally made this last weekend. Same recipe too, but without the Earl Grey. My friend Scott (he was at my party) got me a creme brulee propane torch for my birthday and I used it for a dinner party. How did the brown sugar turn out? I used plain white sugar. It was yummy :)
