Everyone's quite busy these days... I figured it'd be hard to round up someone to go get thai food with me... and what was I to do when the "use by" date on my tofu reads ... well. today? Thai curry time!!!
I love thai food. My favorite curry is pumpkin, but all the other ones are great too. I used the whole package of tofu on these recipes... with 1 zucchini and 1 yellow squash... 2/3rd of a can of coconut milk :).. and I have lunch and dinner.. I only scooped out half for today's lunch. A meal like this would cost at least 15 bucks at a restaurant down the street ($10 bucks is standard for one curry dish in this area! :(.. and that's not including tax and tip and they charge for rice! ) ... didn't use any meat and I"m sure these veggies aren't authentic (but that's all I had on hand :() anyway, the total cost for this is around $1 for the tofu, $1.50 for the veggies $1 buck for coconut milk ( I buy these at the asian food store ... they're a LOT cheaper there.) and well.. iono how to calculate the pastes.. but I must have used a few table spoons of each .. and it's barely made a dent (that container was $2.50 each)... so these dishes cost under 5 bucks to make? Awesome. What's even better? I made it all in around 20 minutes. I had my zucchini cupcakes baking in the oven.. and those were done in 23 minutes... why so much squash-ish things? $.99 / lb at the store...I bought a few... cuz they last quite a while. :)

This can be found at many asian food stores. I got mine at 99 Ranch.. they also have smaller packet for a buck or so. I followed their direction for when to add what, but altered a lot of stuff to my taste. I have no idea how much 50 grams is.. so I added a glob, if it was too spicy I added more coconut milk, if it was too mild, I added more paste. |
