Simple Peanut Butter Chocolate Chip Cookies - no flour or butter needed!

Flourless? Buterless? Easy? Delicious? YES YES YES YES!

I was in the mood to make cookies....my craving was horrible! I wanted to make really really simple cookies. I was even thinking of whipping out my brownie mix and making cookies from that... but then I found this recipe for peanut butter chocolate chip cookies. I think this recipe combines a lot of my loves: chocolate...peanut butter.. and cookies... and to my surprise they looked and tasted JUST like a regular cookie!

The first peanut butter recipe I tried was by martha stewart... ah yes, another failed attempt at her recipe (don't get me wrong... Martha was my idol growing up!... until she went to jail.. but still.. I grew up watching her before and after school... since the food network didn't exist yet... to me she had the perfect life, she was good at everything she did.. cooking... crafting.. entertaining... yep.. that's who I wanted to be when I grew up) I'm sure it was a good recipe, but I made it in a toaster oven. I waited until my mom left to play around in the kitchen. I was probably a freshmen in high school at the time and still learning about cooking and food... like how margarine was NOT butter... ah.. that blew my mind. I quickly mixed up the cookies, made cute indentations with the tines of the fork and baked it... what I didn't realize was the high oil content of peanut butter.. and how that made the cookies burn quickly... they burnt.. badly... I was bummed. I didn't want to make it seem like I failed, so I scraped off al the burnt bits into the trash... they scraped off pretty easily but still left that burnt taste.. I threw away the ones that were beyond salvable....then my mom came home and was like hm.. did you burn something? sigh. what a fail. Anyway, I've never made peanut butter cookies like that ever again. I actually have a thing against toaster ovens now.. probably because I've had a lot of burning mishaps with them... I'll stick to the big ovens... just as long as they're gas powered :)

Easy Peanut Butter Chocolate Chip Cookies

Makes 18 
1 cup smooth peanut butter
1/3 cup brown sugar
1/3 cup white sugar
1 egg
1 teaspoon baking soda
1 cup chocolate chips
Sea Salt

1. Preheat oven at 350 degrees
2. Mix up everything but the chocolate, stir until smooth, add chocolate chips , use a medium cookie scoop, and drop by the scoopful onto a lined cookie sheet, press down slightly. Lightly sprinkle with sea salt.
3. Bake for 12-15 minutes, depending on the size of the cookie, check to see if it's brown around the edges, if it looks like it's browning too quickly, move it up to a higher rack.
