Ad Hoc at Home Carrot Cake and Molasses Brown Sugar Buttercream




I just felt like baking... That's all I wanted to do when I got home. I checked the mail, didn't get my scores... so I knew tomorrow would be the day. I've been intrigued by the Thomas Keller for quite some time. My goal in life is to make it to the infamous French Laundry to see what the hype is about. I've gone to Yountville probably twice in the last few years. Most recently, I went after wine tasting over the summer. A must stop is  Bouchon Bakery.... why? ... DESSERTS!.. but yea.. another Thomas Keller creation...he has yet to fail to impress me. Anyway. I saw this recipe for carrot cake, and thought, why not? I bought a pound of organic carrots ( they're so much smaller than the regular ones! :( ) the day before and I have all the other ingredients.. so then I set up shop... grating and grating and more grating..sifting and sifting. and toasting the walnuts... I didn't think it'd be as laborious as it was.... but dang... I must have grated 6 carrots to get 1.5 cups worth! I thought the cake was delicious. It was just simply.. carrot cake. Nothing fancy..or spectacular... but that's not a bad thing. I'd make it again but I think I'd just stick with the larger carrots. This is a very classic "keep in my recipe book forever" type of recipe.

The frosting... was.. so yummy.. maybe I was just really hungry, but I found myself taking samples of it. It was different. I normally make a cream cheese frosting for this, but didn't feel like breaking out the cheese... so I improvised. I whipped up the butter threw in a lil milk, dark brown sugar, pumpkin pie spice and molasses..with a good amount of powdered sugar. The only thing was... time was winding down, so I piped in a rush... on semi warm cupcakes... yep.. it was a mess. Anyway, less than a day later, I'm all out of cupcakes. I ate 6 of them... don't judge me. I'm in disbelief as well. I gave 5 away. I think this recipe was supposed to make 12... guess I didn't grate enough carrots. :(

I called this.. "The Ugly Cupcake" .. I actually ended up freezing the frosting... which was a big mistake...I froze it in the piping bag... for a few minutes... and it hardened up!... I had my fans running on high to cool the cakes... arg. I think I just love the stress.
