Homemade Granola

My breakfasts are pretty typical these days. It usually involves some sort of unsweetened yogurt, fruit, and  granola. I pair that with one of those bars and I'm usually good for a few hours. Yea, I know, it's pretty light, but it's better than just running out empty handed. I like to have my breakfast be really heavy on whole grains and fiber. Granola is expensive. I still haven't figured out why. Just another food where "because they can" = high prices. I decided to make my own granola over break. It was super simple and so delicious! I just added whatever I had on hand and baked it. It was a great snack alone, and even better when added to my yogurt. A lot of recipes call for honey, but I don't have much of that so I used creamed honey and a little molasses. I think it adds some richness to the flavor. I might make this a ritual of baking up a large batch at the beginning of the week just so I can have fresh granola each week!

Homemade Granola: Adapted from Epicurean Mom 

1. Preheat Oven at 325 degrees, move rack to second to top position, line a large baking sheet with parchment or a silpat 


2. Bring all the ingredients below to a slight simmer, don't burn it!
2 tbsp dark brown sugar
2 tbsp oil
1 tbsp butter
1 tbsp creamed honey
1 tbsp molasses


3. Mix these ingredients in a large bowl
2 cups old fashion oats
1/4 cup chopped almonds
1/4 cup chopped walnuts
1/4 cup chopped dried cranberries
1/8 cup almond meal
1/4 cup ground flaxseed
1/4 tsp pumpkin pie spice 
1/4 tsp cinnamon
a pinch of sea salt 

4. Mix #2 with #3 until well coated and transfer to the lined baking sheet, spread so it's even, and back for 25 minutes or until crunchy. Use a spoon to stir it every 10 minutes.
