Such a hearty meal that doesn't take too long to prepare... the waiting part can be excruciating though... I woke up super early this morning and went to the grocery store down the street... I won't lie, it got me really depressed that I wasn't with my mom today/ don't have a child and a lovely husband who's buying me flowers and ingredients to make an unforgettable mother's day breakfast for me... sigh... that will come one day... Anyway, I picked up the necessities and left. I love stews.. the thicker the better, and I've basically made enough to just eyeball everything and season to taste. I used Guinness Extra Stout this time, and added a lot more paprika, this was basically a combination between Irish beef stew and Hungarian goulash... ahhh yes.. my favorite things. I baked this stew in a dutch oven for 3 hours... and checked on it every 30 minutes to see if I needed to add more seasoning or water... it was so delicious... and I served it with some egg noodles, and sour cream... I don't know why, but I love sour cream on my stews... it gives it an extra tang and creaminess to the taste... I also threw some corn on the cob into the oven half way through the cooking process... I usually bake corn at around 425 degrees... but I was baking everything at 350 ... so I figured 1.5 hours at a lower temp would be good enough.. and boy was it.. the corn was sweet on its own... I didn't put any butter or seasoning.. just took off the husk and wrapped it in foil... eating it was a pain though... a dentist's nightmare... oh well at least it reminded me to floss today.... yes.. teeth. I love it when my patients brush before coming, but even if they don't it's just so cute hearing them be so insecure about the stuff on their teeth... I strangely don't get grossed out anymore... because really.. I've seen it all.
- Changes: Fresh Roma tomato instead of canned
- 2 tbsp ketchup
- guinness extra stout
- no celery
- Baked in a covered dutch oven for 3 hours at 350 degrees
~ Corn - remove husk, wrap tightly in foil, bake alongside stew for 1.5 hours (you can add butter/ salt/pepper if you want... I just wanted corn :) )
