Happy Mother's Day! - Banana Bread

Here's to you, Mom, banana bread that one day I will make for you, and mint from the mint plant you plucked out of your garden. 

Well, this is a rare year where I won't be home for Mother's day... I always made it a point to fly home for Mother's day during undergrad... and I'm only a mere 45 minutes from home.. and I can't make it back :/ We celebrated mother's day a week early this year because of my test schedule. I was much more free last week, and took her around San Jose because that's what she wanted... anyway, I must say, with a lot of bias, that I have the best mom out there. Why? She still does everything for me... my mom is a harder worker than I have ever been. She still makes me food, buys me groceries, and does my laundry... even if I tell her a million times that I think that it's time that I do everything myself... I'm a big girl now... I'm 24 years old... and still, she refuses to let go.... Yep, that's my mom. When I go home... she bakes me cakes, and makes what she thinks is my favorite foods... It's not like I never see her either.. I think I saw her every other week this quarter.. at least. She was the one who inspired me to cook. I've watched her cook every day when I was little. She cooked a different meal for each person, and never complained. She was always the last one to eat, which I always thought was silly.... but that's how she did it.. and she refuses to do it any other way. My mom let me help out sometimes when I was little, whether it was making her carrot cupcakes, or measuring out things for bread. I remember those good ol days where she would lay newspaper on the dining room floor and have me and my sister play around with the recipe. I hope to be that mom one day... most people know, that's one of my main goals in life is to be a mommy... just like my mom. My mom came out a few weeks ago for her dental appointment with me, yes, she even decided to be my patient because she knew I was short on procedures... and well..after her early morning BART ride, she brought me a home cooked lunch, and banana bread she just made using a recipe I shared with her.. maybe the first recipe I've ever shared with her.. it was so long ago! I discovered possibly the easiest and best banana bread recipe when I was probably in middle school. I still use it, but have been searching for new recipes hoping that there will be a better one that's just as easy. Today, I tried the cook's illustrated best banana bread recipe... I think it was pretty good! I like to let banana bread sit for a day to really develop the flavor so I'll wait to comment on if it's better than my recipe. The recipe itself was very similar, just had an addition of yogurt, and also this cinnamon sugar topping ( I also snuck in some flax.. but a very minimal amount...: ) ) .... So far.. so good let's hope I still have some pieces left tomorrow... almost halfway done with the ring.. and it's only been a few hours ! : /

Also in the oven... irish beef stew... ( my apt smells sooo gooddd) Last week I couldn't figure out what to eat.. so I ate granola bars for a lot of it.. my appointments ran long... and my days ended really late... it was killer... so I'm going to make sure I have some food for the week since I'm treating kids all week... and I have no idea what's coming my way.... well let's hope that my first day of fillings goes well.. oh yea, and that I pass my pharm midterm.... zzzzz ok time to learn about drugs...  :(


Recipe adapted from Cook's Illustrated : Best Banana Bread 

Dry:
1 cup AP flour
1/3 tsp baking soda
1/4 tsp fine salt
1/4 cup white sugar
2 tbsp brown sugar
1.5 tbsp ground flaxseed

Wet:
1.5 bananas mashed
2 heaping tbsp low fat yogurt
3 tbsp melted butter, cooled slightly
1 egg lightly beaten
1/2 tsp vanilla extract

Topping:
2 tsp white sugar
2 tsp brown sugar
3/4 tsp cinnamon

1. preheat oven at 350 degrees, spray a small 6 inch bundt pan or small loaf pan with some non stick spray.
2. Mix everything in "dry" in a bowl,  "wet" in another bowl (larger than the dry), and "topping" in a very small bowl ... sorry really not technical, I hope this makes sense ... : /
3. Fold the dry ingredients into the "wet" bowl. Mix until combined
4. Pour into a prepared pan, even it out, and sprinkle the toppings on.
5. Bake for 25 minutes, or until cake test turns out clean ~ optional: broil the tops on LOW for a few minutes to get it nice and brown. Let cool for 10 minutes before taking it out of the pan.
