I think this might have been the first time I actually peeled a tomato... I get too lazy when I cook and just dice up the tomatoes and toss it in... what a difference it makes! ... no annoying little pieces of skin getting stuck in between teeth.... and... with the method that I found with peeling the skins.. I'll be doing a lot more of that . This was an interesting recipe. I used basil from a squeeze tube. I hesitate to buy herbs because I never use it up quick enough. My herb garden idea kind of backfired on me... so yea.. I still resort to the normal dried herbs. Well.. basil is something I totally wish I could grow. I might try it again one day, but that last one was just awful... it died within a few days... I know my thumb is somewhat green.. maybe not grass green.. but like.... baby green? I don't know.. the only herb that I have that's thriving to the help of my parents coming out every week.. is my rosemary bonsai... and rosemary isn't something that I use too much in everyday cooking. So on my recent trip to Safeway, I saw these tubes of herbs... and thought.. why not... couldn't hurt.. it was not a bargain at 3 bucks a tube.. but that'll save me money in the long run since it's supposed to stay "fresh" for a long time. I made enough bruschetta for two sittings... for.. one person.. so really.. not so much... (used 2 roma tomatoes)

The recipe worked.. I added a bit of cheese to it for some more added texture and flavor. I also added greek seasoning... yea yea... I mixed it up. I'm just glad I'm starting to be able to eat tomatoes again. Phew. I would like to say that my body is finally learning how to cooperate with my eating habits.. but then I might just jinx it. I'm just incredibly thankful for the fact that I don't feel like I get ulcers with coffee anymore.... baby steps.... to eating chocolate full time again. :)
