My Last Finals Week... EVER! - Irish Beef Stew Revisited

One year ago, I made Irish beef stew for the first time... it was so good... this year, I didn't change a thing... just because I feel like it's going to be my unofficial tradition. It's my last finals week ever, that's right..never have to sit in a large room with all my classmates taking the same ol' test.... never have to look like a weirdo power walking to school No. 2 pencil in one hand, and notes in the other .... that is defintiely a milestone... but well.. quite bittersweet. 7 years of college (11 finals week in almost 3 years!!) ... is almost over! I can't believe it's already here... but then again, I haven't actually studied for any of my finals.. and it's St. Patty's day weekend... hence... go out every day.. type of thing. One day my studying priorities will come about... but hey.. never again right? Cheers to my last set of finals... let's hope it goes well..  :)

This is my go to recipe for stews.. I've run out of Guinness though.. so I guess I won't be making this anytime soon:

  • Irish Colcannon
  • Fried Cabbage
  • Chocolate stout cake with Baileys buttercream
  • Guinness Draught
  • Guinness Extra Stout

After we finished eating, we walked down to the Marina for some festivities.. mainly green beer, and a healthy supply of Guinness (Eastside West, Monaghan's and then Pizza Orgasmica)... it was a beautiful day, so much energy/ obnoxiousness all around... makes me wonder why I like the Marina so much when it's filled with so many immature frat boys... who aren't really in frats anymore...Oh well. I feel like it makes me feel like I'm still living out my youth to the fullest. I couldn't have asked for a better neighborhood to live in :) I always think that this is my once in a lifetime chance to live in Pacific Heights...which is probably correct... but.. I just never want to leave :(
