Chocolate Sour Cream Cupcakes
(Makes 6 cupcakes, sorry I cook in small batches)

Ingredients:
1 cup packed brown sugar
1/2 cup butter or margarine, softened
2 eggs
2 teaspoons vanilla extract
1- 1/3 cups all-purpose flour
1/3 cup + 1 tbsp baking cocoa
1/2 tablespoon baking soda
1/4 teaspoon salt
1/2 cups sour cream
2/3 cups boiling water
1/2 cup butter or margarine, softened

1- 1/3 cups all-purpose flour
1/3 cup + 1 tbsp baking cocoa
1/2 tablespoon baking soda
1/4 teaspoon salt
1/2 cups sour cream
2/3 cups boiling water
Instructions:
- Preheat oven at 350 degrees, line or spray pan with oil/flour
- Cream brown sugar and butter until smooth and fluffy, add eggs one at a time and vanilla extract and blend until combined
- In another bowl combine dry ingredients, mix well
- Slowly add dry ingredients to wet mixture, stir in the sour cream until combined and then stir in the boiling water, batter will be thin
- Bake cupcakes for 20 minutes or until cake test comes out clean
- I truly believe sour cream is going to be my answer to all my "dry" cakes problems ! : /
