Chocolate Cupcakes with Strawberry Cream Cheese Frosting


Chocolate Sour Cream Cupcakes
(Makes 6 cupcakes, sorry I cook in small batches)
Ingredients:
1 cup packed brown sugar
1/2 cup butter or margarine, softened
2 eggs
2 teaspoons vanilla extract
1- 1/3 cups all-purpose flour
1/3 cup + 1 tbsp baking cocoa
1/2 tablespoon baking soda
1/4 teaspoon salt
1/2 cups sour cream
2/3 cups boiling water
Instructions:
  1. Preheat oven at 350 degrees, line or spray pan with oil/flour
  2. Cream brown sugar and butter until smooth and fluffy, add eggs one at a time and vanilla extract and blend until combined
  3. In another bowl combine dry ingredients, mix well
  4. Slowly add dry ingredients to wet mixture, stir in the sour cream until combined and then stir in the boiling water, batter will be thin
  5. Bake cupcakes for 20 minutes or until cake test comes out clean
* For the strawberry frosting, I eyeballed everything, some cream cheese, some butter, a little but if strawberry puree, and enough confectioner's sugar to create the desired consistency*

- I truly believe sour cream is going to be my answer to all my "dry" cakes problems ! : /
