Ribs and Potatoes


This is my weekend plan ahead meal, little fuss, basically just bake and eat... I figured it was kind of summer, and the weather, well in LA at least, isn't too nice... but that didn't stop me from craving ribs. I wish I had a bbq grill to actually get that smokey flavor... : / Oh yeah, this meal only feeds 2.
BBQ Ribs (Makes 5 Ribs) 5 Pork Ribs
1/3 cup bbq sauce
1/2 tsp garlic salt
1/2 tsp seasoning salt
  1. Sprinkle and rub salts on the meat, smother the meat with BBQ sauce, reserved around 2 tbsp for later use
  2. Take a large piece of aluminum foil and wrap the meat up tightly, marinate for at least 8 hours, but best over night ( I did mine for 30+ hours)
  3. Preheat the oven at 300 degree and bake for 1.5 hours in the foil, open foil and brush on the remaining BBQ sauce, and bake for another 30 minutes at 350 degrees
Garlic Herb Potatoes 2 medium size red potatoes cut into 8 pieces each
2 tbsp olive oil
1 tbsp garlic
1/4 cup sliced onions
1/2 tsp dried thyme
1/4 tsp nutmeg
3/4 tsp garlic salt
  1. Heat 1 tbsp oil in a large skillet on medium heat, and saute onions and garlic for 2 minutes
  2. Add potatoes and seasonings, cook for at least 5 minutes on high
  3. Preheat the oven at 400 degrees
  4. Place potatoes into a small baking dish and drizzle with remaining oil, toss to coat
  5. Bake for 30 minutes, or until fork tender
