Oatmeal Chocolate Chip Cookies


Oatmeal Chocolate Chip Cookies

I've always been a fan of oatmeal cookies, but still am searching for the best ones. These were ok, very chewy as the recipe states... I just can't remember if they were better than the William Sonoma's Oatmeal Cookie Recipe.. oh well. I don't know if I like my cookies chewy.. crispy.. moist? Ah, a cookie is just a cookie.. if I had more time, I would have toasted the oats for that nutty flavor, but I don't know if my taste tester would approve of this unique spin to a classic cookie. : )


1 Stick Butter
1/2 cup brown sugar
1/8 cup white sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup flour
1.5 cups quick cooking oats
1/4 cup semi-sweet chocolate chips
1/4 cup mini semi-sweet chocolate chips

1. Cream butter and sugar for 2 minutes, stir in eggs, vanilla.
2. Mix in flour, salt, and baking soda until combined, then add in the oats and chocolate.
3. Refrigerate for at least 1 hour
4. Pre-heat oven at 335 degrees, scoop out balls of about a tablespoon on both halves.. ( a 2 tablespoon ball? ) Flatten with a spoon or fork... these won't spread! Bake 12 minutes. Cool on sheet for 3 minutes then transfer to cooling rack.

I realized halfway through baking that my first pan's cookies were NOT spreading... I had to take them out and flatten them.. and then rebaked... it wasn't too nice to look at afterwards because the chocolate smeared all over the place when I flattened them.. These were the ones I flattened before baking, they retained their weirdly kind-of circular shape after baking... but hey I'm not looking to make the perfectly circular cookie.. If that was my intention.. I would have used cookie cutters!
