Basa with Fruits and Nuts Couscous

So, here is my attempt at eating healthy. I seasoned the basa with lemon pepper seasoning as well as some cumin, and pan fried it with a little bit of olive oil, and crushed red peppers ( placing that into the hot oil really brings out the heat!) Here's a recipe for the couscous. I used whole wheat to try to be healthier. It was pretty tasty, and took just a few minutes to make! This meal had a lot of protein, and fiber. Yay, fiber. HAHA Can you sense my enthusiasm for healthy eating? Don't get me wrong, this stuff is actually really good. I just can't wait to indulge in some oily goodness. Just a few more days. I'm trying to be in the best shape and fitness of my life, for the week, let's see how that goes!

Fruits and Nuts Couscous
1 serving

1/3 cup water
1/2 tsp butter
a dash of salt
1/8 cup golden raisins
1/8 cup dried cranberries
1/3 cup whole wheat couscous
a dash of nutmeg, lemon pepper seasoning
toasted almonds

1. In a small saucepan, boil water with butter, salt, raisins, dried cranberries.
2. Add couscous and stir.
3. Remove from heat and cover with a lid for 5 minutes.
4. Remove lid, and fluff with a fork, season to taste, plate and sprinkle some toasted almonds on it.

Simple right?! It's amazing how quick and easy couscous is to make! This dish goes very well with fish and chicken.
