Crispy Oatmeal Cookies


What kind of cookies do you like? Chewy? Crispy? Soft? Crispy around the edges, and soft in the center? Everyone has their preferences. I don't know what mine are, just as long as the cookie is gooooood. Well, someone had a request for crispy oatmeal cookies. It was hard finding a recipe for these ones because normally oatmeal cookies are soft and chewy. I found this by doing a search through foodgawker.com. It was a recipe that was from America's Test Kitchen. It was pretty good! I didn't have much, I basically shipped the entire batch. I made these during my week of "healthy" living...and I know exactly how much butter was in it, and why these cookies were crispy, not chewy.. yay for the magic of BUTTER.

Crispy Oatmeal Cookies (From The Best of America’s Test Kitchen)

Makes 20 cookies

- 7 tbsp unsalted butter, room temp

- 1/3 Cup granulated sugar

- 1/8 Cup brown sugar

- 1/2 large egg <- haha I cut this recipe in half... I didn't want to use up that much butter!

- 3/4 Teaspoon vanilla extract

- 1/2 Cup all-purpose flour

- 1/4 + 1/8 Teaspoon baking powder

- 1/4 Teaspoon baking soda

- 1/4 Teaspoon salt

- 1.25 cups old fashion oats (not quick cook)

1. Preheat oven at 350 degrees. Cream butter and sugar until fluffy (3 minutes.) Beat in egg and vanilla until combined.

2. In a separate bowl, sift flour, baking powder, soda, and salt. Add to butter mixture until combine.

3. Stir in oats. Form using a medium sized cookie scoop. Flatten with a spatula dipped in flour, to prevent from sticking.

4. Bake for 10 minutes, or until golden brown. Leave cookies on tray to cool completely, then remove and store. This step will make the cookies extra crispy.

* when cooled, drizzle on some melted dark chocolate candy melts and chocolate chips, I used probably 4 parts candy melts and one part chocolate chips (I wanted a softer chocolate drizzle, since the candy melts are quite hard.)

*To drizzle- I melted all of the chocolate in a ziploc bag, and squished it around to distribute the melted chocolate. I then cut a small hole on the corner and squirted it out. I used the same technique to write, and this candy melt/ chips ratio makes writing pretty easy. Just remember to work fast, candy melts harden TOO quickly!

drizzle drizzle drizzle...I had no time to waste, 3 hours to decide on a recipe, make it, wait for it to cool, take pics, pack it up, and run to the post office... but all this drizzling... ended up in this...

haha... cool... candy melts harden so quickly!... cleaning this up was easy, just snap off all the chocolate pieces... resulting in this...

What's great about these cookies? Perfect for shipping. They don't break or bend, or at least I don't think they do....I forgot to ask... even if it did, I'm sure they were still edible :)
